Instructions
Step 1
In a food processor, blend up the pistachios until fine. Slowly add in the parmesan cheese, while continuing to blend, along with basil, lemon juice, salt to taste, and enough olive oil to create the texture of a pesto.
Step 2
Cook the pasta to al dente package directions. Mix in pesto, and add a little bit of pasta water if it needs to be loosened up a bit.
Step 3
Plate and top with stracciatella, crushed pistachios, and a drizzle of olive oil.
