One Pan Baked Orzo

Instructions

Step 1
Preheat oven to 400F
Step 2
To a 9x13 baking dish, add tomatoes, mushrooms, broccolini, onion, rosemary, thyme, salt, pepper and coat with olive oil.
Step 3
Cook in oven for 15 min.
Step 4
Remove from oven, add orzo and broth. Mix well, cover with aluminum foil and return to oven. Cook for 10 min, remove and give a stir to ensure the orzo doesn’t stick to the botttom of the pan, then return to the oven (covered) and cook for 10 more minutes.
Step 5
Remove from oven. Use the back of a spoon to burst the tomatoes, add the grated parm and mix well. Top with mozzarella and return to the oven for 5-10 minutes more.
