Chipotle Eggs in purgatory

This dish may be called eggs in purgatory ,but I had a holy experience eating them. The eggs are cooking in a smokey, sweet, and spicy sauce. Perfect to kick those fall allergies and clear your nose.

Instructions

Step 1
Cut and deseed your chilis. Toast them in a dry pan. Once toasted add into a jar and top with boiling water cover and let rest for 10-15 minutes.

Jump right in and start by putting a pan with avocado oil on your stove over medium high heat. Place a small pot of water on the stove as well to bring it to a boil. Prep your onion and garlic by cutting into large pieces about 1/2-3/4in thickness. Place in the oil and start to sear on all possible sides. Remove onion and garlic from heat and set aside.

In the same pan add your paprika and thyme into the oil and toast until fragrant. Now that your kitchen smells like heaven we are gonna add our canned roasted tomatoes. Mix in your onion, garlic, chilis, and basil into your pan. Turn to a low simmer and let cook for 30 minutes. Once you have set a healthy boundaries with your sauce and give each other some alone time you can come back and blend your sauce until smooth.

Sprinkles in your olives to your finished sauce. Give it a taste and adjust your seasoning accordingly. Reduce your sauce to a simmer. Create a little pocket in your sauce to crack your eggs into. My mother has a phobia of runny egg whites so I added a lid since I was rushing. If you do this without the lid just be patient. Once your eggs are cooked to your liking remove and place on a trivet with a ladel. This is sure to impress company when you bring it to the table. If you feel like using your toaster you can add a little bread to dip into your saucy eggs.
