24 ouncesboneless skinless chicken breasts
cut into bite-sized pieces
1 tablespoonolive oil
½ teaspoonchili powder
¼ teaspooncumin
¼ teaspoongarlic powder
¼ teaspoononion powder
¼ teaspoonsalt
¼ teaspoonblack pepper
1 headcauliflower
riced
½ cupchicken broth
¼ cupcilantro
chopped
¼ cupred onion
chopped
¼ cuptomato
chopped
¼ cupavocado
chopped
¼ cupsalsa
Instructions
Step 1
Heat the olive oil in a large skillet over medium heat.

Add the chicken to the skillet and cook until browned on all sides.

Add the chili powder, cumin, garlic powder, onion powder, salt, and pepper to the skillet and cook for 1 minute more.

Add the cauliflower rice and chicken broth to the skillet and bring to a boil.
