Samoa Cupcakes
My take on the girls scout Samoa cookies, but in cupcake form.

Ingredients

Cupcakes
2 ¼ cupflour
½ cupcocoa powder
1 ½ tspbaking soda
¼ tspsalt
½ cupbutter
softened
1 ¾ cupsugar
1 tspvanilla
3eggs
1 ⅓ cupwater
cold
Caramel Sauce
Caramel Frosting
Coconut Caramel Topping
Chocolate Gnache (Optional)
Instructions
Cupcakes
Step 1
Preheat oven to 350°F
Step 2
Sift flour, cocoa powder, baking soda, and salt
Step 3
Beat butter for 30 seconds
Step 4
Add sugar and vanilla, and beat until combined.
Step 5
Add eggs, one at a time.
Step 6
Add flour mixture and water, alternating, on medium-low speed until just combined
Step 7
Bake cupcakes for 15 to 20 minutes until a toothpick comes out clean.
Caramel Sauce
Step 8
Add sugar and water in sauce pan.
Step 9
Cook over medium heat and cook until sugar disolves and turns clear, a few minutes.
Step 10
Raise heat to medium-high and cook until amber, about ten minutes. Stirring during this time may cause crystalization.
Step 11
Turn off heat and add warm heavy cream. Heavy cream that is too cold may cause crystalization. Stir.
Step 12
Add butter and stir until smooth.

Let cool to room temperature.
Caramel Frosting

Beat butter until smooth
Step 15
Add 2 1/2 cups powdered sugar & caramel and beat again.
Step 16
Add more powdered sugar if frosting needs to be thickened.
Coconut Caramel Topping
Step 17
Toast coconut in oven, pour into bowl and crush with spoon.
Step 18
Pour in 1/2 cup caramel sauce. Add more caramel if needed.
Chocolate Gnache
Step 19
Heat cream in microwave for 45 - 60 seconds.
Step 20
Pour over chocolate and let sit for 2-3 minutes.
Step 21
Start whisking slowly in the middle of the bowl - whisk in 1 direction until mixture is smooth.
Assemble Cupcakes

Pipe a circle of frosting around each cupcake.
Step 23
Put the coconut topping in the middle of the frosting
Step 24
Drizzle with chocolate Gnache if desired.
