Stir-Fried Celery and Onions

Mirepoix is a mixture of chopped onions, celery, and carrots in French cuisine. When gently cooked in oil, it produces very pleasing flavors that are usually used as a base for other dishes. In Italian cuisine, a similar mixture is called soffritto. In Cajun cuisine, onions, celery, and green bell peppers in combination are called the "holy trinity" and are used to make various key sauces. Here, I take advantage of this chemistry and make it a main dish, instead of using it just as a flavor base. It is a quick and simple way to make a delicious and healthy vegetable dish.

Instructions

Step 1
1. Heat a large frying pan over medium heat. Add the olive oil and swirl to coat the bottom of the pan. Increase the heat to high and once ripples appear in the oil, add the onion. Stir immediately to coat the onions with the oil, then cook until fragrant, about 30 seconds.

2. Add the celery, stir, cover, and cook until heated through, about 1 minute. Uncover and stir constantly until the celery turns brilliant green and a little translucent,

1-2 minutes.
Step 4
3. Add the tomato and kosher (flaked) salt.
Step 5
Stir to combine and heat through, about 1 minute. Remove from the heat, sprinkle with the coarse sea salt and garlic, stir, and serve.
