Greek quinoa salad

Instructions

Step 1
Cook quinoa according to package instructions. Set aside to cool. Combine olive oil, vinegar, lemon juice, oregano, salt and pepper to taste. Set aside. Thinly slice kale. In a large bowl massage kale with 1/4 of the dressing until kale is edible. Add remaining vegetables and feta to the bowl. Mix well. When the quinoa is cool, add it to the bowl. Top with dressing. Mix well. Salt and pepper to taste.
