Six-ingredient pancakes
The easiest, most delicious, six-ingredient pancakes! Pancake day is coming and this simple, plant-based recipe is just what you need
- 350g self-raising flour
- 1 tablespoon chia seeds
- 400ml almond milk
- 2 tablespoons coconut oil, melted (+ more for cooking)
- 2 tablespoons maple syrup
- A handful of berries
1. Mix the flour and chia seeds in a large bowl. Then add the almond milk, melted coconut oil and maple syrup; mix well, until a smooth batter forms. Set the batter aside for 4–5 minutes to thicken a little.
2. Next, warm some coconut oil in a pan over medium heat. Once the pan is hot, add a large spoonful of batter to the pan, moving the pan around (if needed) to make a pancake shape.
3. As the pancake begins to set, sprinkle some fresh blueberries on top and cook for 3–5 minutes, until the bottom feels cooked. Flip and cook on the other side, until cooked through.
