¼ cupunsalted butter
5 clovesgarlic
minced
¼ cupflour
½ teaspoongarlic powder
½ teaspoonsalt
1 teaspoonground black pepper
2 ¼ cupschicken broth
3 ½ cupsshredded sharp cheddar cheese
divided
3 cupsrice
cooked, white or brown will work
2 cupschicken breast
cooked and shredded
12 ouncesfrozen broccoli
pieces, cooked according to package
fresh parsley
chopped, optional garnish
Instructions
Step 1
* Preheat oven to 350 degrees.
Step 2
* Spray a 9×13" baking dish with non-stick cooking spray and set aside.
Step 3
* In a large skillet, melt butter over medium high heat. Stir in garlic and cook for 30 seconds. Add in flour, garlic powder, salt, and pepper and mix together using a whisk.
Step 4
* Pour in chicken broth, whisking constantly, until the sauce begins to boil and thicken.
Step 5
* Stir in 2 1/2 cups shredded cheese until melted and smooth.
Step 6
* Add in the cooked rice, cooked chicken, and cooked broccoli. Gently fold all together.
Step 7
* Carefully dump the chicken broccoli rice mixture into the prepared pan.
Step 8
* Top with remaining 1 cup of cheese and fresh parsley, if using.
Step 9
* Bake for 20 minutes or until the cheese is melted.
