Instructions

Step 1
Cook the chorizo for about 8 mins on medium high then add the ground beef for about another 8 or so mins. Then add the onion, garlic, and cumin. Cook til onion is soft. Drain fat if it’s way too fatty. Although the better beef makes better chimichangas. After that add in tomato sauce and turn to low and simmer covered for about 15 or so mins. Then uncover it and turn it up to medium and cook until any extra liquid is gone and it’s thickened up.
Step 2
Depending on freshness of tortillas you may need to warm them up
Step 3
Then you just put a spoonful of meat mixture and cheese. Fold in the sides and roll up. Then close it off with a toothpick.
Step 4
I prefer them cooked in veg oil. Heat up about an inch deep in pan. Then flip when it’s kinda tannish brown
Step 5
I usually serve with pick de gallo and sour cream
