Homemade Pesto Pasta with Spicy Honey Glazed Salmon Bites

Feel free to substitute pine nuts with brazil nuts. I’ve found with this recipe I always end up with a little extra left over pesto. If so it goes perfect on a grilled cheese sandwich the next day.

Instructions

Step 1
Start by prepping your pesto. Adding basil leaves, pine nuts, garlic cloves, grated parmesan, olive oil and half a juice of a lemon to a blender (or food processor). Seasoning with salt and pepper to your taste.
Step 2
Blend pesto to your preferred consistency (I prefer mine on the chunky side). Then pop in the fridge to use later.
Step 3
Before you start on the salmon, pop your pasta in a pot and cook on the hob as normal, adding a splash of olive oil to the water.
Step 4
For the salmon start by patting the fillets dry with a piece of kitchen roll. Then chop into “bite size pieces. (I usually get 4 to 5 per fillet)
Step 5
Pop the fillets on a plate and season with the dried herbs and spices as listed in the ingredients list along with some salt and pepper.
Step 6
Heat up a drizzle of olive oil in a pan on medium heat and cook the fillets for 4-5 minutes on each side.
Step 7
Once done set aside and add a splash more olive oil and the diced garlic to the pan. Fry this up for around 2 minutes before adding in wet ingredients I.e. soy sauce, honey and lemon and reintroduce the salmon.
Step 8
Cook for a further 7 minutes until the salmon is browning nicely and remove from the heat.
Step 9
At this point your pasta should be finished, remove from the heat and drain. In the same pot the pasta cooked in mix pasta with desired amount of pesto.
Step 10
Plate up and Enjoy :) If you’re feeling fancy add some salad leaves on the side, I’ve found lambs lettuce goes beautifully.
