Instructions
Step 1
Cut tomatoes and onions into discs, and roughly chop pepper.
Step 2
Lay out on baking tray. Drizzle with oil and add salt, pepper, parsley (and any others desired).
Step 3
Cook at 200°C Fan for 15-20 mins, then remove to plate/bowl to cool slightly.
Step 4
Use the same tray to lay out pastry. Cut into 6 squares and cut 1cm in at each corner.
Step 5
Put baked veg, ~1bsp cream cheese and some grated cheese on each square.
Step 6
Fold the 1cm edges inward to create a rim around each square. Brush with 1 beaten egg.
Step 7
Cook at 200°C Fan for 15-20 mins or until pastry is golden brown.
