softened
50gbrown sugar
220gall-purpose flour
30gpowdered sugar
1egg
1 pinchsalt
1 tspbaking soda
2 Tbsphoney
1 tspcinnamon

For the Royal Icing
Instructions
Step 1
In a bowl or the bowl of your stand mixer, combine the flour, brown sugar, white sugar, salt, baking soda, and spices. Mix well.
Step 2
Create a well in the center, then add the egg and honey.
Step 3
Knead the dough for a few minutes by hand or using a stand mixer.
Step 4
Add the softened butter and knead again until you form a smooth ball of dough. Be careful not to over-knead to avoid overheating the dough!
Step 5
Lightly flour your work surface, roll out the dough slightly, and wrap it in plastic wrap. Cover and refrigerate for about 1 hour.
Step 6
Flour your work surface again, then roll out the dough evenly.
Step 7
Using a cookie cutter, shape your gingerbread men and place them on a baking sheet lined with parchment paper.
Step 8
Bake at 180°C (356°F) for about 10 minutes, or until the cookies are golden but not too dark.
Step 9
Remove the cookies from the oven and let them cool completely.
Step 10
Decorate them with royal icing for the final touch: Mix powdered sugar and water (or use lemon juice instead). If the icing is too runny, add more powdered sugar; if it’s too thick, add more water.
