Instructions

Step 1
Bring a pot of water to a boil on medium-high heat then slowly add eggs. Boil for 6 minutes for a runny yolk, 7 minutes for jammy yolk, or 8 minutes for a firm yolk. Then immediately place eggs into an ice water bath to make peeling easier. Peel the eggs and set aside.
Step 2
While the eggs are cooking, make the marinade. In a container or ziploc bag, mix together soy sauce, mirin, and water. Add sugar if you want it sweeter (note: mirin is already sweet).
Step 3
Add eggs into the container or bag and make sure it is fully covered in the marinade. Marinate covered and sealed overnight, up to 12 hours.
Step 4
Remove eggs from the marinade and serve with ramen, rice, or whatever you like and enjoy!
