Instructions

Step 1
Chop some green onion into strips (both white & green part). Cut some of the white part into smaller pieces. Finely mince some garlic and ginger.
Step 2
In a mixing bowl, put cornstarch, water, light soy sauce, sugar, cooking wine, oyster sauce, dark soy sauce, black pepper and give it a good mix until the sugar is completely dissolved.
Step 3
Cut beef tenderloin into slices, transfer sliced beef to a mixing bowl. Add cornstarch (6 tablespoons) and toss them around. Make sure that every piece of beef is nicely coated.
Step 4
Put a good amount of oil into a wok and place it over medium heat. Once the oil reaches the right temperature (test it with a chopstick to get bubbles to appear), add in the beef. Once the meat is cooked through, take it out and drain the oil.
Step 5
Put cooking oil in a skillet. Add in garlic, and ginger. Once you smell the amazing aroma, add the white part of green onion and stir it for about 30 seconds. Add some dried red chilies and stir it a few times.
Step 6
Pour the sauce and give some time to caramelize for a couple of minutes. When the sauce gets thicker, change the heat to HIGH heat and add in the drained beef. Toss it around and coat this beef as fast as you can.
Step 7
Once it’s done, turn off the heat and garnish with green onions (green part).Drizzle sesame oil and give it a quick stir. Serve it with a bowl of hot rice! Enjoy~!
