Baked Brie en Croute

I keep serving this at parties because guests find it delicious, and they are delighted with how fancy they feel when they say "baked Brie". Goes great with tart fruit preserves (fig and strawberry-rhubarb are my favorites) and any kind of table spread. It's best to use a firm, slightly underripe Brie wheel for this recipe. To make ahead: the Brie can be prepared through step 3 (do not freeze) and refrigerated, wrapped tightly in plastic wrap, for up to 24 hours. Freeze for 20 minutes before continuing.

Instructions

Step 1
Roll the puff pastry into a 12-inch square on a lightly floured counter. Using a pie plate or other round guide, trim the pastry to a 9-inch circle with a paring knife.
Step 2
Place the Brie in the center of the pastry circle and wrap it in the pastry. Press the pleated edge of the pastry up into a rim, which will later be filled with the preserves or jelly.
Step 3
Brush the exterior of the pastry with beaten egg.
Step 4
Transfer to a parchment-lined baking sheet or lightly-greased glass pan and freeze for 20 minutes.
Step 5
Heat the oven to 425 degrees and place rack in the center position.
Step 6
Bake the cheese until the exterior is a deep golden brown, 20 to 25 minutes. Transfer to a wire rack.
Step 7
Spoon the jelly into the exposed center of the Brie.
Step 8
Cool for about 30 minutes. Serve with crackers or bread.
