1 poundskirt steak
2 Tbscoconut aminos
½ tspcoarse sea salt
2 tspsesame oil
¼ tspfreshly ground black pepper
1 tsparrowroot starch
½ tspbaking soda

1 TBSfish sauce
Red Boat brand preferred
2 tspsesame oil

Instructions
Step 1
MARINATE THE BEEF: Slice beef against the grain to about 1/4 inch thick and place in bowl with remaining beef ingredients. Mix well and set aside in refrigerator.
Step 2
PREPARE THE STIR FRY SAUCE: Combine the coconut aminos, fish sauce, toasted sesame oil and black pepper in a small bowl and mix well. Set aside.
Step 3
Blanch broccoli florets in boiling water for 1-2 minutes. Soak in cold water to stop from cooking. Drain.
Step 4
Heat the ghee in a sauté pan over med-high heat, then lower to medium and add garlic and ginger. Season with small pinch of salt and stir fry until fragrant 8-10 seconds, being careful not to burn aromatics.
Step 5
Increase heat to medium high and add beef. Cook on one side until sides are slightly charred and crispy, flip and repeat. Cook until done 3/4 way through.
Step 6
Add stir fry sauce and stir fry 1 minute
Step 7
add the blanched broccoli. Stir fry for another 30 seconds, tossing to combine. Serve hot and immediately.
