Instructions

Step 1
Bring eggs to room temperature before using. Crack eggs into a bowl and whisk until foamy. Add lemon juice and flour, and whisk again.
Step 2
Meanwhile, bring broth not quite to a boil in a 4-qt saucepan. Add orzo. Simmer for 20 minutes or until orzo is tender. Add salt & pepper.
Step 3
Slowly add 1 ladle of hot soup into the bowl and whisk quickly. Add one more ladle and whisk again, so that the eggs warm up and cook gently.
Step 4
Pour the egg mixture back into the pot while constantly stirring so eggs do not curdle. Put lid on and cook at a low simmer for 3-4 minutes. Serve.
