The most simple and comforting dinner you can ever make. After a long weekend of celebrating the bank holiday, this is just what you want for dinner!
1 garlic clove, sliced
150g orzo
600ml water
150g frozen peas
1/2 lemon, juiced and zested
65g pancetta, diced
20g Parmesan, grated
1 egg yolk (optional but recommended)
Basil
Salt
Pepper
1. Heat a pan over gentle medium heat and add the pancetta. Cook gently for around 7 minutes, until the fat has rendered out and it is mostly crisp. At this point, add the sliced garlic and cook for 30 seconds more. Then add the orzo, water, lemon zest and lots of salt. Add a parmesan rind if you have one. Stir well then simmer for around 10 minutes.
2. When the orzo is almost done, add the peas. When cooked, stir in the parmesan, lemon juice and fresh basil. Remove the pan from the heat, and add an egg yolk. Stir well and serve up.
