Wash your vegetables and set them aside for prep.

BLANCH THE BROCCOLI
- Prepare a pot of boiling water for blanching broccoli.
- While waiting for the water to come to a boil, cut the broccoli into bite-size pieces.
- When done cutting the broccoli, place them all into the boiling water and let it sit for about 30 seconds (until all the broccoli looks bright green).
- Drain the broccoli and then shock it in ice water to stop it from cooking (keeps the broccoli green and crunchy for later).

- Slice into 1-2 in. long, 3-4 mm thick pieces

COOK THE STEAK
- In a large pan or wok, heat about 2 tbs olive oil on medium-high heat.
- When the oil releases steam, add your steak—make sure to separate the pieces out to ensure even cooking.
- Let the steak sit for about 20 seconds and then start stirring it around.
- The steak will begin to release brown juices—continue stirring until all the beef is brown and you see no pink.
- Drain the juice from the pan into a cup (we'll use it later)

- Add the onions into the pan and continue cooking it with the steak until the onions become clear (3-5 mins)
- Add more oil if the bottom of the pan becomes too dry
- Add about a teaspoon of your minced ginger at this step
- Turn heat down to low and salt to taste
- After it's salted to your liking, remove the steak and onions from the pan into a large plate or bowl.

COOK THE ZUCCHINI AND MUSHROOMS + GINGER
- Turn heat to back up to medium-high and add about another tablespoon of oil and wait for it to steam
- Add in your zucchini, stir and cook for about 1 minute
- Add in the mushrooms, stir and cook until mushrooms are cooked through
- Add about another teaspoon of ginger at this step
- If the bottom of the pan becomes dry, add a splash of water or more oil. - Continue adding a little water if the pan is too dry so that it does not burn.

ADD IN THE REST OF THE INGREDIENTS
- Drain the broccoli and then add them into the pan
- Add your plate/bowl of steak and onions back in
- Add saved steak juices back in
- Mix in the rest of your ginger

SEASON
TIP: When seasoning the stir fry, add your seasonings to the liquid at the bottom of the pan to let it dissolve and then stir everything together into the liquid. This way, you won't get clusters of sections that have more flavor than others.
­­ ­ - If you are using Thai chili, slice it in half and add it to the bottom of the pan. You can also use red pepper flakes if you do not have chili.
- Add butter into the liquid and mix to dissolve
