Sesame Chicken

We don’t call for chicken breast too often because I cringe at the expense. It’s so much more economical to purchase whole birds and cook into multi meals or part them down yourself into legs, thighs, breasts and wings (so easy with just a little practice). But use what fits your time and your budget. This is a dish I usually will make if breast is on sale. **DId you know that most of us think that 1 chicken breast = 1 serving when in actual fact, 1 chicken breast = 2 servings (or even 3 if it’s large).

Instructions

Step 1
In a wide bottom pot bring 2 cups of water, ½ tsp of salt and the rice to a boil. Cover with a lid and reduce the heat to a simmer for 18-20 minutes.
Step 2
Mix ingredients for sauce and set aside.
Step 3
Place broccoli in a pot or pan with 1 inch of water and a sprinkle of salt. Cover with a tight fitting lid. Bring it to a boil for 2 minutes then turn off the heat.
Step 4
While the rice is cooking and the broccoli steams, mix the chicken, cornstarch and pepper together.
Step 5
Heat saute pan over medium high heat and quickly toast sesame seeds being careful - they go from toasty to burnt in a flash! Set seeds aside.
Step 6
Turn the heat up on the saute pan and add the vegetable oil. Brown the chicken, working in batches if needed to avoid overcrowding the pan.
Step 7
Add the sauce and half of the toasted sesame seeds to the cooked chicken and heat until thick and generously coating the pieces of chicken.
Step 8
Fluff the rice. Serve chicken atop 1 cup of rice with broccoli on the side. Garnish chicken with toasted sesame seeds, a drizzle of sesame oil and green onion.
