Tofu Salad Sandwich

This sandwich is just like an egg salad sandwich but instead of egg, tofu is used. It's every bit as creamy and delicious!

Ingredients

0.5 x 12 ozextra-firm tofu
or firm
¼ cupvegan mayonnaise
½ tablespoondijon mustard
1 teaspooncapers
⅛ teaspoonblack salt
also called kala namak, or regular salt
½ teaspoonturmeric
¼ teaspoonblack pepper
1 ribcelery
chopped
chives
0.5red pepper
chopped
4 slicebread
Gluten-free if preferred
Lettuce
or other veggies, for topping
Instructions
Step 1
Add the tofu, mayonnaise, mustard, capers, salt, turmeric, and pepper to a food processor. Blend stopping to scrape the sides as needed until the tofu is broken down, but still contains a bit of texture. Add in the celery, red pepper, and chives and pulse to incorporate.
Step 2
Spread the tofu salad on bread or toast and top with veggies as desired.
