MARINATED HERRINGS IN VINEGAR WITH SEA ROSEMARY
So simple and yet so delicious, for us this is the ultimate meze, encapsulating Greece in a mouthful. You can use this recipe to marinate fresh sardines or ancho?ies in the same way.
As its name suggests, sea rosemary grows close to the sea and has a naturally salty aromatic fla?our that marries well with fish. Look out for it at fishmongers or speciality grocers. If you can’t find it, try using marsh samphire, also a?ailable from fishmongers and large supermarkets.

Step 1
Rinse the herring ?llets and pat them dry with kitchen paper. Place them in a large oval glass or ceramic dish and drizzle over the vinegar. Cover and leave to marinate in the refrigerator for at least 8 hours.
Step 2
Remove the herrings from the marinade and dress with the olive oil and sea salt. Sprinkle with the spring onions, chilli and sea rosemary and ?at leaf parsley leaves, and they are ready to serve.
