Step 1
1. Heat 3 tbsps oil in a pan over medium-low heat, add your garlic cloves, chopped basil and tomato passata.
Step 2
2. Cook for 15-20 mins, stirring occasionally.
Step 3
3. Season with a pinch of salt and black pepper and set aside.
Step 4
4. Chop your aubergines into cubes (approximately 1.5 cm thick) and place them into a colander. Sprinkle some sea salt on top and let your aubergines rest for about 20 mins. This process will make the aubergine release its bitter juice!

5. Rinse your aubergines to remove excess salt and pat them dry.
Step 6
6. Heat 2 cm olive oil in a large frying pan (170C/340F) then fry your aubergine cubes in batches until nice and golden. Pat them dry and set aside.
Step 7
7. Chop your fresh basil then add it to your tomato sauce along with half of your fried aubergines and give it a nice stir.
Step 8
8. Boil your pasta in some salted water, drain it and mix it with your sauce adding some pasta water if needed.
Step 9
9. Serve your pasta alla Norma with the rest of your fried aubergines on top and abundant freshly grated Ricotta salata cheese.
