Curried Sweet Potato Chickpea Burgers

The added curry powder and coconut gives these vegan burgers the perfect taste to enjoy at any time of the year. Made with chickpeas; ideal for providing protein, fibre and B vitamins.

Instructions

Step 1
Preheat oven to 200 C. Line a baking sheet with grease proof paper. Sprinkle over the cubed sweet potato and chickpeas over the top of this paper. Coat with a tablespoon of vegetable oil and toss to combine. Bake in the oven for 20 minutes. Set aside to cool.
Step 2
In a food processor, put the oats and blend until flour like consistency. Add the creamed coconut, coriander, turmeric, cumin, curry and garlic powder, salt and pepper and the lemon juice and blend together.
Step 3
The mixture should hold together when pressed between your fingers. If too dry, blend for a bit longer or add a tablespoon of water to help moisten it.
Step 4
Take 1/4 of the mixture and shape into a burger size. Continue until you have made 4 burgers.
Step 5
Grill the burgers on a medium heat, until golden brown, for about 5 minutes on each side.
Step 6
Serve warm with a burger bun. Divide the lettuce leaves, cucumber and red pepper by 4 and place on each plate or in the burger bun, and enjoy!
