Instructions

Step 1
Cut the tomato, shallots, and dill. Place in a bowl and season with fish sauce and pepper.
Step 2
Pat the fish dry before frying. Fry fish until golden brown.
Step 3
While fish is frying, mince the garlic, and break ip the rice with your hands.
Step 4
In a pan, fry the garlic in some oil until slightly toasted. Add the rice and season with salt and garlic powder. Fry rice until warmed through and slightly dry.
Step 5
In a small bowl, combine the water and the cornstarch to make a slurry. Crack the eggs into the slurry and scramble.
Step 6
In a cold pan, add the butter and eggs. On low heat constantly scramble the eggs until it just comes together. You want it to be slightly runny.
Step 7
To assemble, place fried rice into the middle of the fish, followed by the eggs, then the tomato salad. For bonus points on presentation, place it in a taco holder. Best server when warm.
