Instructions
Step 1
On medium heat, add chopped onions onions and garlic and sauté until transparent.
Step 2
Peel and chop sweet potatoes and carrot into one inch cubes and add to onion and garlic mixture.
Step 3
Add in vegetable stock and boil on medium until soft.
Step 4
Add all ingredients into blender and blend until smooth, adding salt and pepper and oil along the way. If it’s too thick, you may add more stock or hot water as needed.
Step 5
Serve and add any additional toppings, such as fried tofu, seeds, or a drizzling of cream.
