Japanese Pancakes 🥞

Thick, fluffy and sweet, you can often find these pancakes or hotcakes (ホットケーキ) at old-school coffee shops called ‘Kissaten’ (喫茶店) in Japan. They’re just as easy to make at home though, pairing perfectly with both sweet and savory toppings 🫶🏻

Using a rubber spatula, make a small well in the dry ingredients and pour in the wet mixture. Whisk until just combined and the batter is smooth.

Fold a damp tea towel into about the diameter of your pan and place on the kitchen bench next to the stove. This is for cooling the pan in between pancakes later!

Heat a non-stick pan over low heat and oil lightly with a paper towel.

Pour in the pancake batter and tap the pan on the damp tea towel to release any large air bubbles before transferring back to the heat.

Cover with a lid and cook for 2 minutes or until large bubbles begin to pop on the surface. Using a spatula, loosen the pancake gently from the pan and flip. Cover and let the other side cook for another 2 minutes or until golden brown.

Tip: These hotcakes burn easily if your flame is too high! Between each pancake, place the pan on the damp tea towel for a couple seconds to quickly lower the heat.
