Chocolate Cracker Toffee

This recipe has been adapted from a recipe I was given by my high school culinary arts teacher 20 years ago. I've made it every year since! It is the MOST addictive addition to any Christmas cookie plate! Simple saltine crackers are transformed when they're coated with the most easy-to-make caramel, a layer of bittersweet chocolate, any toppings your heart desires and a sprinkle of sea salt! The crisp, toffee texture will have you and your loved ones wanting more and more.

Instructions

1. Preheat oven to 400 degrees F (200 degrees C). Line a large baking tray (13" x 18" or similar) with nonstick parchment paper.

2. Place crackers in a singe layer over parchment to line the entire base of baking tray. Feel free to break crackers as needed to make them fit to tray.

3. In a saucepan over medium heat, combine butter and brown sugar. Gently melt the butter and sugar together, stirring frequently until the butter and sugar have combined nicely and they've made a smooth mixture. Bring to a gentle boil over medium heat. Boil gently for 4 minutes, stirring frequently with a wooden spoon until smooth + thickened. You can stir in a dash of vanilla at this point if you’d like.

Pour caramel on top of crackers. Spread with an offset spatula or spoon to evenly coat all of the crackers. Make sure the caramel is spread to the edges of the crackers as well.

While the crackers are baking in the caramel mixture, you can prepare your toppings of choice. Chop any chocolate bars, crumble any cookies or chop any nuts you will be topping your Chocolate Cracker Toffee with.

4. Bake for 6-7 minutes until nice bubbles are forming on top of the caramel, then remove and turn off oven. Take tray out, sprinkle chocolate chips evenly over the top and put tray back in the warm oven for a couple of minutes to melt the chocolate. Take tray out of oven and spread the chocolate chips with an offset spatula or spoon until you have an even melted layer of chocolate over the top.

Sprinkle your toppings of choice over the chocolate. Using the back of a spatula, press the toppings into chocolate. Sprinkle on some Maldon sea salt.

5. Chill in refrigerator or freezer for at least half an hour, or until chocolate is completely set. Or you can just let it cool and set at room temperature if you aren't pressed for time. Break into pieces and store in sealed container or zip top bag in refrigerator for up to one week.

TOPPINGS: Please note that the toppings are totally customisable - top it with whatever you'd like! I just plan for about four large handfuls of toppings for a large tray of Chocolate Cracker Toffee. I've suggested some of our favourite toppings in the ingredients list above, but please pick and choose what you'd like!

TYPE OF CRACKERS: In the USA or Canada, the type crackers you want are called saltines - get the salted ones. In the UK, I use Barilla Cracker Salati/ Colussi Salted Crackers/Doriano crackers. Size of crackers will vary by country - my recent batch only needed 20 because they are double the size of a normal saltine cracker - just focus on lining the tray versus counting the crackers. In the UK these can be found at Italian delis or at some of the main supermarkets.
