Instructions
Step 1
Flatten chicken breasts between 2 ziploc bags and pound until 1/4 inch thick.
Step 2
On each chicken breast, place a slice of ham and a slice of cheese.
Step 3
Fold in sides, then roll up from one end to the other.
Step 4
Coat each chicken breast with flour. Dip in mixture of egg, oil and water. Roll in bread crumbs to coat thoroughly.
Step 5
Place chicken breast in baking dish or on cookie sheet and bake at 375゚ for 30 minutes.
Step 6
To make the pineapple sauce: combine Brown sugar and water in saucepan. Bring to a boil, stirring until sugar is completely dissolved. Cook undisturbed for 5 minutes or until the drip begins to pull back on the spoon. Add lemon juice, butter, sherry and fruit. Continue to cook for a few minutes until fruit is tender or heated through.
Step 7
Pour a small amount of the sauce over chicken breasts to serve and pass the remaining sauce in a separate bowl.
