Instructions
Step 1
roast both red and yellow peppers in the oven
Step 2
take out red pepper after 20 minutes, take out yellow after 30-40
Step 3
cut up the carrots and toss in melted butter and a drizzle of honey. roast for 1 hour 20 minutes, covered in foil
Step 4
slice the red pepper and add it to a pan with oil
Step 5
fry for 10 minutes
Step 6
add in risotto rice and toast for a further 5 minutes
Step 7
add in the chopped tomatoes
Step 8
add in the roasted garlic and seasonings
Step 9
add small amounts of water until rice is fully soft
Step 10
add in freshly chopped basil and stir
Step 11
stuff risotto inside bell pepper et voila
