This healthy Mediterranean meatloaf is a great twist on the traditional dish. It's a moist, flavorful meatloaf stuffed with hard-boiled eggs and vegetables, rolled and topped with a layer of a glazed seasoned tomato puree.

Ingredients

1kgground meat
turkey, beef or pork
0.5onion
finely diced
125gcarrot
peeled, grated
125gzucchini
small, grated
1 ½ cupbreadcrumbs
4 clovesgarlic
mashed
2 Tbspolive oil
3 Tbspparsley
chopped
1 tspsalt
1 tspblack pepper
1 tspmustard powder
1 Tbsppomegranate molasses
mixed in 1 tbsp of water
4eggs
hard boiled, for 6 minutes, & peeled
4 Tbspcrushed tomatoes with Italian seasoning
or catchup
Instructions
Step 1
Preheat the oven to 180°C. Thinly mince the onion, garlic, zucchini and carrots In a frying pan, combine the minced veggies with the olive oil and cook on medium heat until soft.

In a large bowl, combine the ground meat, breadcrumbs, parsley, cooked veggies and spices. Knead with your hands until perfectly combined.

Add half the meatloaf mixture to an 8x4 inch bread loaf pan. Add the four hard boiled eggs on top of the meat and cover with the other half of of the meat completely.

Spoon the crushed tomatoes all over the meatloaf. Cover with aluminum foil and place in the oven to bake for 45 minutes.

Take it out of the oven and let cool 10 minutes before taking it out of the bread loaf pan and serving.
