This recipe is a very versatile one. You can add any frozen veggies you like. It is my favorite meatloaf. Easy to make. I have been making this meatloaf for 30 years. I have always regroups my ground beef whenever a recipe like meatloaf, hamburgers, or meatballs calls for ground meat. I swear this step makes the meat juicier and more tender.

Instructions

Step 1
Preheat oven to 350 degrees F. Spray loaf pan with PAM. Place half of your ground meat in food processor fitted with steel blade. Pulse on/off until ground to a uniform color. Three pulses usually works for me. Empty contents into a large bowl.
Step 2
Repeat Step 1 with remaining ground meat. Empty into large bowl.
Step 3
Chop onion in food processor and then empty into bowl with meat.
Step 4
Mix onion and meat. Then add egg, kosher salt, and pepper to the mixture and mix till blended.
Step 5
Mix in frozen vegetables and half a can of tomato sauce.
Step 6
Pour mixture into a loaf pan or small roasting pan that has been sprayed with PAM.
Step 7
Put meat mixture into pan. Pour rest of tomato sauce on top. Bake at 350 degrees F for 1 hour. Make sure to see if you need to baste loaf about every 20 minutes. If necessary, cover with foil for last half hour and add 1/8 cup water so top doesn’t dry out.
