Ingredients
4 servings
6 cupsRomaine lettuce
or iceberg
2 cupsbaby kale
or mixed greens
1 cupcherry tomatoes
halved
½ cupnicoise olives
or other
0.5red onion
sliced
2 cupspotatoes
small, cooked and cut in thick slices
1 cupgreen beans
Sauteed 4-5 minutes until just tender
4eggs
hard boiled, peeled and quartered
4radishes
thinly sliced
1 cuptuna
solid, canned, cooked chicken, cooked shrimp or beef if desired
For the Dressing
Instructions
Step 1
Begin by whisking dressing ingredients together. Set aside for flavours to develop
Step 2
Boil potatoes for 15-20 minutes until tender. Drain and cool slightly before cutting in to thick slices. (or use leftover potatoes from Sunday dinner)
Step 3
Saute beans for 4-5 minutes until tender
Step 4
Toss together all salad ingredients except hard boiled eggs with enough dressing to coat evenly
Step 5
Arrange salad on serving plates and add a hard boiled egg to each
