It’s not an *exact* replica, but pretty darn close in our humble opinion. To get the trademark flavor, we use hoisin and soy sauces and rice wine vinegar. Water chestnuts deliver crunch in lieu of crispy rice sticks.

3 Tbsphoisin sauce
3 Tbsplow-sodium soy sauce
2 Tbsprice wine vinegar
1 Tbspsriracha
1 tspsesame oil
1 Tbspextra-virgin olive oil
1onion
medium, chopped
2cloves garlic
minced
1 Tbspginger
freshly grated
0.5 lbground chicken
1 ccanned water chestnuts
drained and sliced
2green onions
thinly sliced
kosher salt
freshly ground black pepper

Instructions
Step 1
1. In a small bowl, whisk together hoisin sauce, soy sauce, rice wine vinegar, Sriracha, and sesame oil.
Step 2
2. In a large skillet over medium-high heat, heat olive oil. Add onion and cook until soft, 5 minutes. Stir in garlic and ginger and cook until fragrant, 1 minute more. Add ground chicken and cook, breaking up meat with a wooden spoon, until opaque and mostly cooked through.
Step 3
3. Add sauce and cook until slightly reduced and chicken is cooked through, 2 minutes. Turn off heat and stir in water chestnuts and green onions. Season with salt and pepper.
Step 4
4. Add about ¼ cup chicken mixture to the center of a lettuce leaf. Repeat until all chicken mixture is used.
