Instructions
Step 1
Combine sweet potato, egg, ham and parsley in a medium bowl and season with salt & pepper. (Cook immediately or mixture will become watery if left to sit.)
Step 2
Heat oil in a medium non-stick frypan over medium heat. Using a 1/4 cup measure, add mixture and press down lightly to flatten out. Repeat with remaining mixture, mixing well each time, and cook for 4 minutes each side until golden.
Step 3
Divide between two plates and serve topped with yoghurt, extra parsley and pumpkin seeds.
