Ingredients

Pie Filling
1 cupsugar
½ teaspoonsalt
½ cupflour
¼ cupcocoa
1 ⅔ cupsmilk
3eggs
slightly beaten
2 tablespoonbutter
1 tvanilla

Instructions
Step 1
In a double boiler, add the salt, sugar, flour & cocoa. Mix to incorporate.
Step 2
Slowly add milk while stirring. Continue stirring and scraping bottom and sides for about 10 minutes, or until thickened. Never stop stirring or you'll have a chocolate cake on your hands!
Step 3
In a separate bowl, beat the eggs. Once step 2 is complete, slowly stir in a small amount of the chocolate mixture while stirring eggs rapidly. If you pour too fast, you'll have scrambled eggs. Take your time.
Step 4
Once egg mixture is tempered, pour back into double boiler and continue stirring for about 3 minutes.
Step 5
Remove from heat and add butter & vanilla. Stir to incorporate well.
Step 6
Pour mixture into a pie crust and refrigerate for at least 30 minutes uncovered to cool. Once cooled, you can add whipped cream & chocolate shavings and you'll be done.
