medium, peeled, seeded and cut into 1/4” slices
1roasted red pepper

2fingerling potatoes
cooked, peeled and sliced into rounds
¼ cupnicoise olives

large, organic, pasture-raised, hard boiled, cut into 4 wedges
1 tbasil
1 tparsley
finely chopped

2 Tbalsamic vinaigrette
Instructions
Step 1
In a large bowl, mix together; tomato, cucumber, red pepper, onion, olives and potatoes.

Season with salt and pepper.

2. Add the basil and parsley and balsamic vinaigrette and mix.

3. Put on salad plates, with egg wedges of top and your favorite protein.
How to hard boil eggs in air fryer:

Preheat the air fryer to 250°F.
Step 6
Add the eggs to the fryer basket and cook according to your preference, between 13 minutes for soft-boiled eggs and 17 minutes for hard boiled eggs. Please note, time may vary between air fryers.

Remove the eggs from the air fryer basket, and plunge them into an ice bath. Peel when cool enough to handle and enjoy!
Cooking fingerling potatoes:

Preheat an air fryer to 400 degrees F

Cut potatoes in half
Step 10
Cook in the preheated air fryer for 10 minutes; stir and cook until desired crispness is reached, about 5 more minutes.
