Instructions
Step 1
Cut zucchini into quarters and add into a bowl with 1/4 cup red wine vinegar, black pepper, 1/2 tsp garlic powder and 1 tbsp olive oil. Keep for 20 mins.
Step 2
Cut bell pepper into strips, place on baking tray and coat with salt, pepper and olive oil.
Step 3
Once zucchini marinates, add to baking tray with bell pepper and add Italian seasoning to both before roasting. Drizzle some more red wine vinegar on zucchini.
