Wet ingredients

heat the milk and water and butter to 111°F and pour into the browl of a Stand Mixer

Add the packet of active dry yeast along with 1 Tbsp of granulated sugar for the yeast to snack on and let bloom for 10 minutes.

Measure the 250g each of bread and all purpose flour, or just 500 grams of all purpose flour if you don't have bread flour, and whisk together with the salt.

Beat the large egg and add it to the wet ingredients

Mix the dry and wet ingredients, attaching a Doe hook to the Stand Mixer and mix together for 1 minute

When everything is combined crank up the speed to medium for 5 to 8 minutes until a smooth, tacky subtle doe forms
Let rise

Clean and lightly oil the bowl or just oil a new one if you're lazy and let the doe rise for one to two hours depending on the temperature of your kitchen until it has doubled in size.

Turn the doe on your work surface and flour on both sides.

devide the doe into roughly equal pieces or just use your scale and devide it equally to 10 equal sized pieces of roughly 100g each

stretch and fold the pieces and shape them like a small baguette with a thick part in the middle and tapered ends.

Place them on a parchment lined baking sheet roughly one inch apart to have a chance to rise, lightly spray some non-stick cooking spray and lightly cover with plastic wrap and let rise for 1 hour

Uncover gently once doubled in size as you dance to your favorite music.

Lightly brush with a beaten egg to give it a golden hot dog bun glossy sheen, optionally you can add some bread seed mix for a more intense aroma and cook in a 350° oven for 15 to 25 minutes until they emerge golden brown.

Let cool down completely on a wire rack and serve with your favorite sausage.
