Hoisin-Glazed Meatballs with Green Bean and Rice

Instructions

Step 1
Preheat oven to 450°F with a rack in the center position. Using a rice cooker, add 1 cup of white rice, 1 teaspoon salt, 1 tablespoon oil, and 1 1/4 cup water. Press the cook button and let the cooker do the rest. I LOVE MY RICE COOKER
Step 2
Peel and finely chop 1 tablespoon garlic. Trim scallions, then thinly slice. Drain green beans.
Step 3
In a medium bowl, combine ground beef, ½ cup of the panko, ¼ cup of scallions, 1 large lightly beaten eggs, 2 teaspoons each of garlic and salt, and a few grinds of pepper. Lightly oil a rimmed baking sheet. Shape beef mixture into 16 meatballs (I use the small ice cream scoop), transferring to the prepared baking sheet as you go.
Step 4
Bake meatballs on center oven rack until browned and cooked through, 10–12 minutes. Meanwhile, in a large bowl, combine hoisin sauce and ¼ cup water, whisking until smooth. Season sauce with salt and pepper. Remove meatballs from oven. Using a slotted spoon, transfer meatballs to hoisin sauce. Stir to coat. Cover to keep warm.
Step 5
Heat 1½ tablespoons oil in a large nonstick skillet over high. Add green beans and cook until tender, 3–4 minutes. Add remaining scallions and garlic cook until fragrant. Season with salt and pepper. Serve Hopsin meatballs over rice and green beans on the side. Enjoy!
