Step 1
Cook pasta in a large pot of boiling salted water, until just tender, stirring occasionally.

2. Whisk eggs and Parmesan in medium bowl to blend.

3. Heat oil in a medium skillet over medium heat. Add garlic, onion and diced prosciutto sauté until onions are slightly browned. Remove from heat.

4. Drain pasta; and return to pot - reserve a ladle of pasta water, and whisk quickly into the eggs, this will temper your eggs. Then add to cooked pasta.

Toss with tongs

5. Add prosciutto mixture and peas (optional) to pasta; toss gently with tongs to blend. Season to taste with salt and pepper and serve.
