Salmon, Roasted Veg & New potatoes.

Oven cook the salmon and your veg for an easy tea! This will make two portions of veg, you can use this as the base for pretty much anything, fir example, cook chicken for Fajita's and add the veg, or warm through with a couple of teaspoons of pesto and have with pasta or rice.

Instructions

Step 1
Pre heat your oven - 200
Step 2
Prepare Vegetables - chop all the veg into a small/medium dice. Put into a baking dish, drizzle with the oil and season with black pepper. When the oven is ready, put in to roast on top shelf for 35 mins. Set a timer for 15mins.
Step 3
Prepare the salmon, place in the centre of a piece of foil, big enough to wrap round so the juices won't escape. Spread the pesto on the top of the salmon. Carefully wrap the foil to form a loose parcel, Place on a baking tray. When your timer goes off, turn the oven down to 180 and pop in your salmon on the middle shelf. Cook the veg and salmon for another 20/25mins.
Step 4
Prepare your new/baby potatoes, no need to peel, just chop in half and boil for 15/20mins.
Step 5
Serve your salmon with the veg and new potatoes.
