Step 1
1: Pre-heat a large pan over a high heat then fry the mince in a splash of oil until golden, remove from the pan and set aside.
Step 2
2: In the same pan fry the carrot, onion and garlic for 3-4 minutes then squeeze in the puree, cook for 2 minutes stirring frequently. Sprinkle in the herbs then pour in the chopped tomatoes and stock. Bring up to a simmer then add the mince back into the pan. Season with salt and pepper then cook over a low heat for 25 minutes.
Step 3
3: Before serving with your favourite pasta add the sugar to taste.
