The basic but yummy fried rice recipe you didn’t know you needed

My 19yo son’s all time fav food is fried rice and so whenever we have leftover Chinese BBQ pork (char siew) and leftover rice, we will most definitely have fried rice the next day. This is a balanced one dish meal that you can whip up in under 20 minutes. Up your game by topping with Japanese mayonnaise, fried shallots and pork floss.

Instructions

Step 1
Heat a wok or skillet on high heat. Add vegetable oil (around 2 tbsp) and minced garlic and sauté for one minute.
Step 2
Using medium heat, push the garlic to one side and add a little oil (around 1 tbsp) plus crack the eggs in. Scramble the eggs quickly until it’s just cooked. Remove eggs
Step 3
Add rice and carrots. If needs be, add more oil (around 1 tbsp). Stir fry for 1 minute under medium heat
Step 4
Add bbq pork meat and return the scrambled eggs back to wok.
Step 5
Add in seasoning and stir fry for another 2-3 minutes till well mixed together
