Step 1
Add your spaghetti to boiling salted water and cook.
Step 2
Meanwhile, add 5 eggs to a bowl and whisk. Add in the grana padano and smoked paprika and whisk until you get a paste consistency.
Step 3
Chop up your chorizo and place in a frying pan. If using fresh garlic, add that too. Fry until crispy then remove and set aside.
Step 4
When spaghetti is cooked, using a cup, remove some of the starchy pasta water (about 150ml).
Step 5
Turn off the heat completely. Add the hot spaghetti to the frying pan with the pasta water and the egg mix and mix together to cook the egg.
Step 6
Divide the pasta into bowls and top with crispy chorizo. Finish with a little grated grana padano and serve.
