Instructions

Step 1
Fry chicken with onion in a little olive oil, add 1 tablespoon of plain flour and stir, coating the chicken and onion
Step 2
Fry gently, then add approximately 3/4 pint of chicken stock (a little at a time and stirring constantly).
Step 3
When all stock added, bring to the boil, still stiring gently. Add sweetcorn and lemon juice, simmer for 15 - 20 mins. while waiting put rice on for 10 - 12 mins.
Step 4
Stir in mushrooms and 2 splashs of cream (or milk) just before serving bring to simmering point.
