Smashed butterbeans

These roughly crushed butterbeans are a great alternative to mashed potato, particularly if you prefer a little more texture. Flavoured with lemon and dill, these butterbeans make a perfect high-protein side dish to sausage, apple and bean casserole. EASY TIP Jarred butterbeans are softer than their canned counterparts, meaning they will ‘smash’ more easily. These tend to be more expensive, which is a consideration if they are part of your weekly food shop.

Instructions

Step 1
1 Heat the oil and garlic in a pan over a medium heat for 2 minutes until the garlic softens and infuses the oil.
Step 2
2 Stir in the butterbeans until coated in the infused oil and cook for 2 minutes to heat through.
Step 3
3 Remove from the heat and use a fork to smash most of the butterbeans.
Step 4
Leave some whole for texture. Stir in the lemon juice and dill, then season to taste with sea salt.
