Instructions

Tomato sauce

Step 1
Chop the onion, garlic and chilli. Quarter the cherry tomatoes.
Step 2
Heat the oil in the pan. Leave the heat on high and add the onions. Fry for 2-3min until translucent.
Step 3
Then add the garlic and chili. Fry for 2 more minutes.
Step 4
Now add the cherry tomatoes. Fry for 2 minutes. Then add the tomato sauce. Reduce the heat to medium and put on the lid. Cook for 8-10minutes.
Step 5
To finish the sauce sprinkle the cheese on the sauce. Do not stir the sauce. Put on the lid an let it cook for 1 minute before turning of the heat

Crunchy chicken

Step 6
Cut the chicken breast in half without cutting fully through. Season with salt, pepper and oregano.
Step 7
To a large plate add the flour, to another one the bread crumbs and to the last one the egg. Whisk the egg.
Step 8
First coat the chicken with the flour. Then dip it in the egg. Finally coat it in the bread crumbs.
Step 9
Heat the oil in the pan. Leave the heat on high. Add the chicken breast: Fry for about 3min each side until crispy and golden brown.

Sandwich

Step 10
Cut the bread in half. Spread both sides with olive oil. Toast until golden brown.
Step 11
Slice the tomato and mozzarella cheese.
Step 12
Spread the bottom bread half with the tomato sauce and the upper half with the basil mayonnaise.
Step 13
Place the chicken on the bottom half followed by the tomatoes and mozzarella.
Step 14
Bake the topped bread half in the oven at 200 degrees for about 2-3min until the cheese is melted
Step 15
Stack the other bread half on top and enjoy!
