6tomatillos
husked
2 x 4 ozchopped green chiles
canned
1 Tbspminced garlic
1 tspchili powder
more to taste
1 tspcumin
more to taste
onion powder
to taste
garlic powder
to taste
salt
to taste
pepper
to taste
2chicken breasts
1 cupshredded pepper jack cheese
1poblano pepper
sliced
2 TbspOlive oil
lime wedges

Instructions
Step 1
Preheat the broiler to high
Step 2
Place the tomatillos in a large skillet and transfer to the oven. Broil for 3-5 minutes, turning halfway through cooking until the tomatillos begin to char all over.
Step 3
Remove from the oven and reduce the oven temperature to 400ºF
Step 4
Transfer the tomatillos to a blender. Add the diced green chiles, garlic, tsp chili powder, tsp cumin, and a pinch each of salt and pepper. Pulse until just combined and a sauce forms
Step 5
Slice the chicken through the middle horizontally to within a 1/2 inch of the other side. Open the two slides and spread them out like an open book. Cover with plastic wrap and pound to even thickness.
Step 6
Coat chicken with salt, pepper, cumin, chili powder, garlic powder, and onion powder.
Step 7
Stuff the cheese inside and then close like a book over the filling.
Step 8
Place the chicken in the skillet. Add the poblano pepper and drizzle both lightly with olive oil. Sprinkle with salt and pepper.
Step 9
Transfer to the oven and bake for 10 minutes. Add the tomatillo sauce and continue baking for another 10-12 minutes or until the chicken is cooked through. Serve with rice or tortillas.
